Last Sunday I was multitasking between the shop trying to get some work out, comforting a new livestock guardian dog, barbecue some chuck ribs. I was able to keep the cook chamber pretty situated, thanks to “my wife’s” new ThermoWorks Signals thermometer (happy Valentines Day, wife!). Due to the shape of the raw chuck and plate ribs, I don’t usually worry about the temp until about 6 hours. Welp, I went to probe it at 6 hours and the probe went in like butter, That’s a good thing, except I was already at 208 internal. Oops.

They were still delicious, but a bit drier than ideal.

Caramelize onions and carrots and let sit.

Toast a ciabatta bun in a frying pan with olive oil and apply garlic aioli.

lunch from last friday ... lived in NJ for about 1.5yrs and developed a thing for meatball sandwiches while there. hard to find decent ones in socal, but this place is legit. ooh and they make these cinnamon knot things and well theyre like crack

Just put 14 lbs of pork shoulder on the Yoder for the night. Pit temp of 185*. Will build a foil boat and add some pineapple juice/vegetable stock/soy sauce in the morning and crank it up to 275* until internal temp is 205*. Carnitas tacos are on tap for dinner tomorrow.

Farm fresh eggs over easy, hashbrowns topped with caramelized onions, Jalapeños, and homemade chili, thick cut bacon, and toast. And a cup of freedom press coffee.
Would have been much more satisfying if I hadn't burnt the shit out of my cornea 15 minutes after this picture was taken.
