Made my wife and I a belated valentines dinner since I was out of town for work during the week. Trying to time everything, especially the béarnaise sauce after we drank two 1.5L bottles of Cooks champagne was a bit stressful…

Looks awesome, but I know the feeling. I am critical on timing everything to be done perfectly together, wife just makes it all and when its done its done. Warm steak with cold potatoes, or pasta etc. Need to get it so everything is ready to eat at the same time!

epic fail on execution tonight. larger cut than normal and i didnt get away with going straight from the fridge to the grill like normal. overdone outer, raw inner and barely edible after grilling the cubed raw pieces in the cast iron.

No clue what these are called, but I saw some dumb video the other day about making dough in a ziplock bag, cutting the corner off, squishing the dough out and dropping it in oil. I tried it and it was pretty good. This time I tried it and tossed the fried bread balls in powdered sugar. Even better.

"Ebelskiver" fried instead of using the traditional pan.

Made burritos the other day, sausage and bean.

Ratio is: 1pkg Jimmy Dean hot sausage, 2 cans (16oz) of beans, 1 can (4oz) of chopped green chilis. Brown the meat, drain the grease, mix in beans & chilis, heat until bubbly and then roll into burritos (with cheese) or smear onto tostada shells.

This is a double batch; I make extra as these are great for lunch:

I do the same thing, once in a while I'll use hamburger instead of sausage. Sometimes we will eat it like a dip or will use it nachos or hard tacos. Truth be told I'll even eat it in a sammich. I love that stuff.

Original "recipe" called for hamburger; we didn't have hamburger one time and used the hot sausage instead and I liked it way better so that's how I make them now. I'll also use it as a dip, particularly if I have extra after running out of tortillas.

I used to mix in a can of "El Pato Jalapeño Salsa" and use hot green chili's instead of "mild", but my wife can't handle the heat. Anything "hotter" than peperoni's and she's out. With the hot sausage and the mild green chilis she has to eat her burritos with sour cream to offset the "heat"... meanwhile I can barely tell there's any heat at all...
