Jalapenos/bison beef/ bacon cheeseburger with homemade potato wedges. Toasted bread (didn't feel like going to the store to buy hamburger buns).

My latest one pot dinner creation.

Cut three or four a large smoked sausages into chunks. Braze over high heat in olive oil. Lower Heat and add two or three large cut up tomatoes. When the tomatoes start to soften throw in a bag of Frozen vegetables. Lower the heat some more and simmer. Pour some balsamic vinegar over everything and simmer it some more. 10 minutes and only one pot to clean up.

Eat it right out of the pot while standing up while holding it over the sink for the win

My ex used to make something similar. Whole breakfast links braised in a pot, once braised she would add a couple of cans of crushed tomatoes and a couple cloves of fresh garlic and a dash or two of W sauce.. It was then served on top of plain old white rice. It was one of the few things she made that was edible.

Real simple really.

Two to three potatoes (I buy when on sale)
Wash them thoroughly - I keep skin on
Cut them up into wedges lengthwise - like to slice thinner as it cooks faster.

I typically use air fryer as its faster versus my electric oven.

Grab the air fryer bottom tray, add canola oil to coat the entire bottom. Toss in potatoes, add in seasoning/spices (in my case I add Vegeta, Paprika, sometimes it could be cayenne pepper/cajun seasoning). Grab a wooden spoon and mix it all well / add a little more oil and mix it up again.

Now and then I will add parmesan/other cheese of choice for like last couple minutes in the air fryer.

Start up the airfryer and set it at 400*, let 'er rip. Done in typically 15min or so, I like them crispy. Check on it a few times as its baking.
 
Spin off from Ted's dish - chicken in my case breaded with Panko (vs chicken fried steak he did).

Emeril's red beans and rice recipe, but with black eyed peas instead of beans. Bam!

Arkansas rice of course. ARoma17 is an aromatic variety developed at the AR Rice Research Center, it's delicious.

Past couple days:

Elotes with pantry raiding:), canned corn fried in butter, cayenne/chilli/mayo/lemon juice/cheese

Pasta with homemade white gravy, veggies and bacon sliced

Found these wings in the freezer (Costco), air fried and mixed with butter/garlic/parmesan - came out pretty good and crunchy

Anyone north of the 49th know that's a dealio price, not shit neethr, Greek style marinaded in garlic onion oregano olive oil, salt n pepper. 18 mins instapot, then 5 mins a side under gas broiler, (fukd up the flip on the potatoes galette)

Smoked chuck. I use the ghost one on its own for eggs in the morning, didn’t find it that spicy. But apparently smoking it for some amount of time releases that heat because it came out significantly spicer than I had intended. But damn good.
Check these guys out, they are local and their spice blends are on point.
