Currently in Saudi Arabia. The customer scheduled a traditional Saudi dinner- two roasted goats for a party of 14. The restaurant does not allow women. The pic shows the aftermath at my "table". The front half was on our ~36" tray. The head is at the top left.
The bowl next to the nose was an excellent salsa- similar to a tomatillo but with good heat and flavor. I could have devoured a quart of salsa with a basket of hot, salty tortilla chips. The bowls at 9 and 3 are what they translated to as gravy, but were really similar to grits. The bowl at 8 o'clock is a vegetable stew. Spoons were the only utensils. The bowls were not individually portioned and we ate directly from them.
Eating loose rice bare handed without wearing it is difficult. I tried the kidney- didn't like it. I tried the brains and they were OK. They had a neutral flavor, creamy texture, and were similar to plain scrambled eggs. I passed on trying the eyes. The meat itself was very moist and cooked to fall off the bone perfection.
