Pellet smoker?

Tried out a reverse sear for lunch, grill grates for the low temp, skillet on diffuser for the sear.

I cook on a covered patio. I have not noticed any soot on the bottom of the aluminum roof. The roof line is probably 9' high where the smoker is.

The welding blanket my buddy hung up to keep him from melting the siding off when he "cleans" his smoker holds soot.

The siding, is melted but clean. :laughing:
 
So I jumped right in with both feet. Got the smoker assembled, Started the Brisket at 10:30pm Saturday, Babysat it for first few hours, spritzing it with a coca cola, apple cider vinegar, worchestire mix. Then left it smoking away on its own from 2 am until 6 am, I ended up resting it in a cooler wrapped in foil from 11:00am until 6pm. I got the ribs smoking at 180 for 3 hours, then wrapped for 2 then back on the rack open for another hour, and also got some pork belly burnt ends going. Had some smoked cream cheese dip as well...

Everything was a big hit, and no left overs. Only issues I had and need to figure out better is how to cook things at different temps and have them all ready close to the same time. Burnt ends being the main one, I wanted to crisp them up but not dry out the ribs, so they ended up in the air fryer to finish.

Smoked some wings last week, Nice and juicy, yet crispy on the outside.

Then did some chicken thighs on Saturday, probably the juiciest chicken I have ever had.

Then last night smoked some home made bacon and beef patties. So good.

So than than the Traeger pellets, what are some other pellets to use? My small town near me, the pellets at the box store aren't any cheaper than the bbq places Traeger pellets.

Heard Costco pellets aren't bad and decent price? Closest one is 3 hours away or I can ask family to bring a bunch up if they are any good.

Another question, what are you guys using to clean your smoker? I had some traeger foil trays, but opted to use tinfoil the last couple of times and just throwing it out when it gets nasty.

I just misted my grills with water and scrubbed them to get clean while still warm. seemed to work decent.

I've only used the cheap pellets. I have nothing to compare them to but they seem to be fine.

I think I pay about $10 per 20lbs?

I've had good luck with costco pellets. If you ask any of the grill companies they will all shit on everything but their own brands but I did get the support guy at Rectec to say the Kingsford brand pellets were also good in their testing. But of course no one near me sells those either.

At this point I don't bother with different flavors in the hopper. Blend for all of them. Only for the little smoke pot I use on the fancy stuff.

I did a bunch of research on this after the Recteq pellets I got when I initially ordered my smoker ran out (was really happy with those BTW). I wanted something I could buy locally and was readily available. I ended up landing on Bear Mountain. TSC keeps them on the shelf but a lot of other big boxes stock them as well. They're $9.99 to $11.99 for 20lbs day in day out.

The trays are nice but I just use foil and replace as needed. The extra wide foil covers my Recteq drip pan without a seam.

I second the Buddeez dispenser. Works awesome and comes with a dry erase sticker to write down the blend name.
 
We use foil in the bottom of the smoker. It works fine as long as we make sure it’s crumpled down in the grease trough.
 
The traeger “pro” I have has replaceable drip tray covers. They’re cheap enough from ace hardware that I just keep them in the garage. Buy a pack anytime I’m in ace for something else.

I have some of those. I used them the first time I used the smoker and put the extras away and got lazy last time and just wrapped with foil :laughing:

I didn't buy the trays, they were thrown in with the purchase when my wife bought the smoker. So wasn't sure if they were cheap or not :homer:

Trying some prime rib steaks tonight. Will try the reverse sear mention above by Void_of_Light Smoker then on to the blackstone.

Super simple. I did forget to mention I melted some butter, mixed in some random spices and put it in the fridge to solidify again. I put that down on the blackstone before I put the steaks on. I got the steaks to 105 before searing them.
 
My favorite pellets I’ve found so far dollars per flavor is the PitBoss competition from Walmart.
 
I saw our Walmart in town has them in stock and if not the ones I want they will be free delivery to the store for pick up so that works.
Worth a try for the cost I think. Put out better/more smoke than the other brands I’ve tried

Tractor supply stocks those pellets as well.
 
I do the tin foil wrap as well, change it every 4 or 5th smoke.
Im a fan of the pit boss comp blend to. Might need to experiment with others but if it aint broke

I can say that if you put your weber smoke fire in the garage for a few months... the pellets you left in hopper will force you to disassemble the auger.
 
All right time to revive this thread again. I am fed up trying to keep my ancient weber gas grill alive as it is mostly rust and doesn't keep a consistent temperature well. It has served well for a literally free grill but it is time and also it doesn't do smoker things which i miss doing.

I have decided to get a pellet smoker because I just flat do not have the time for babysitting a stick burner and honestly everything I have had from a pellet has tasted perfectly good. The general consensus seems to be reqtec is the way to go both here and among the people i know.

That said I could use some input on what to get. Currently torn between buying two different smaller models to allow me the variety of range to do what i want or just getting a dualfire 1200 that can run two temps and direct as well as indirect heat. Anyone have one and can tell me if it does well if the temp setting between compartments has a wide gap? Should i just get a bullseye and patio boss instead? Not really worried about the money of it as i have some money aside and other than my cars and guns this is my only other real hobby. Anyway penny for yalls thoughts.
