Pellet smoker?

I noticed I started overcooking things when I got my instant read because I was going "by the book." I went back to going by feel, checked with the instant read, and made notes on what I considered "done." Started cooking juicy food again.

There's the actual tables, not just the max



Following these, those of you smoking dem bitches for 2 hrs have them cooked after the internal temp had been 145 out greater for 14 min. :grinpimp:

On a roughly 4% fat chicken breast, @ your 150 internal temp it only needs to be that hot for under 3 min. The food scientists are on your side even though the "cook it to all to death" food safety Nazis won't understand.

my Gf is looking to buy a smoker. She's a fantastic cook and I'm trying to steer her in a good direction for a smoker. We've been looking at Pit Boss and Traeger. She currently has a table top Traeger and likes it, its just too small. Costco has a Trager on sale for $600, Tractor supply has a Pit boss that's similar but its bigger. I'm going to be the benefactor of the food that comes off this thing, so I'm trying to find the best one for her. She's going to be smoking more than cooking on it. Her other grill is gas( I'm a charcoal cooker myself) She's not interested in stick burners, going to have to be automated pellet fed. What say IBB?. Traeger or Pit Boss?
A big charcoal Webber grill and what ever smoker you chose are a must... The Webber is my go to grill. Pellet smoker is for ribs and slow cooked chicken. Big smoker and a couple of Webbers would be the norm for me. You won't go wrong with either Pit Boss or Webber.:smokin::smokin:
 
Apparently the traeger pulls some amperage. Kicked the breaker and I found that diagnosing WTF was wrong. That was a 20+ year old Walmart extension cord and 3 way. Reset the breaker and used another 20+ year old Walmart extension cord and smoked my ribeyes and jalapeño poppers.

Well, wife surprised me for my birthday yesterday, and came home with a Traeger Timberline 1300, cover, some other accessories and a few bags of pellets. :smokin:

I guess I got some assembling and learning to do :laughing: She asked if we could cook something this weekend. I got 6 briskets in the freezer... but not sure that's what I want to start the learning curve with.

Go big or go home. Time and temperature my dood.

Start it in the morning, if it gets done too early wrap it in a towel and throw it in a cooler, you can rest it like that for hours.
 
Learning curve? It’ an easy bake bbq. Put the meat in and take it out when it’s done.

It’s so I can do it. But I did burn the hell out of my hands. 🤷‍♂️

I have that smoker. Works great just keep the pellet hopper full.

The phone app it comes with will literally cook the brisket for you using the timer and temp probe. Just turn the smoker on go to recipes and hit start cook.
