This is Ol Fashion Amish style bread.
In a small bowl, mix
2.25 cups of hot tap water,
1/3 cup of lard and let the water dissolve the lard. Let come to a warm temperature and if you need a thermometer, your forehead is a great gauge. (Optional any other oil)
Add 1.5 tbsp of yeast. Mix and set aside.
In a large bowl, mix
2/3 cup of sugar,
4 cups of flour,
1 tsp of salt.
Optional: 1-2 tsp of dill.
Pour in the wets and stir by hand. Adding 2 - 2.5 more cups of flour. This mixture is easy to kneed by hand and very light. Mix for 1 song or about 5 minutes. It should be semi tacky afterwards. Clean the large bowl out and wipe the surface down with oil or lard.
Let rise twice in size, then kneed. Repeat.
Line baking sheet with oil or lard.
This will make 2.5-3 loafs. Or 32 large dinner rolls. To make them pull apart easily, coat your hands with oil and allow a small amount to come off on the dough. Bake at 325 for 30-35 minutes.
