Pellet smoker?

Done, wife works Thanksgiving. We are going to eat today👍

Did my 18lb turkey in ~6-7 hrs thanksgiving morning @ 225. Tastes delicious, had amazing juice.


So I did a hog shoulder roast yesterday - about 10 lbs, ended up with 5 lbs of meat and about a cup of 'flavor' juice that's not fat.


I'm gonna make some more of Priest's chili. Shit's amazing.
 
Got a Recteq bullet (regular) on the way for my birthday. Going to replace the trager, the extra 300* will be nice for when I just want to cook some steaks, pizza or burgers on it.

A little annoyed at their shipping - Im in GA so it should be quick and checkout said 4-6 days. But I'm getting sent out of town next week and when it hadn't shipped and I asked support it was 1-3 day to ship, the 3-7 days for arrival. Thats 4-10 days by my maths.

So it works like this...

1 day to ship? Likely arrive in 3 days.

3 days to ship? Likely to arrive in 7 days or less.

Just plan on the slowest estimated arrival. Expect it sooner.

I don't use it for grilling though - I did some burgers to "season" it :confused: and it's been smoke since then. I don't think I've had it over 350 intentionally

I use mine for everything, Pizza, steak, hamburger, hot links. I haven’t looked at the propane grill since this showed up. Sorry Hank Hill, King of the Hill:grinpimp:
 
I used a pizza stone, cooked it at 450 for about 10 or 12 mins. Keep an eye on it. I cooked a pre make pizza from a place called Papa Murphys

Perfect. I'm using a walmart crust, so.... yeah. either way, it's on the grill now


40 minutes later, I'd like to report the smoked pizza was delicious. I'm also fatter. :homer:

For context I’m young but started smoking bbq when I was around 20. Got very into it and very good at it . Smoked a ton of bbq with an old friends Dad and Uncle on a well built trailer smoker . Fast forward a while into it a bunch of research led me to purchase a WSM. I cranked out tons of amazing bbq . Cooked for family , events , weddings , baby showers , etc . Love that damn thing .

Years pass I have kids and I use it less and less so I pick up a gas grill instead of the far superior kettle ( old genesis that I restored) , I loved that thing for a gasser. Years pass again I pick up the newest, latest greatest weber genesis half off at end of season and give the refurbished Weber away. I still have a Smokey Joe that I love and I’ve picked up a couple black stones , a pit boss pellet smoker and now another large pit boss pellet smoker .


All that being said to say that I hate the pellet smokers , it isn’t remotely as good, it’s an outdoor oven and that’s really it . There’s hardly any smoke, cook is way less like smoking much more like bbq’Ing and quite frankly ir sucks . This always pisses guys that are diehard pellet smokers off because they hate to hear it but it wasn’t ever meant to be better but it was meant to be easier . I also hate the new Weber . I think I’m going to take the pellet grill and weber to the lake and go back to a kettle and I ordered all new grates this week for the WSM .


For those of you that haven’t bought a pellet grill yet or have and just can’t get that excited . I highly recommend trying a WSM and if you’re unsure they’re usually cheap to pick up on Craigslist or MP because people do stupid shit and replace them with electric smokers like me . I can’t explain how excited I am to start using it again . I used to grill almost every day and smoke almost every weekend , snow, cold, hot, didn’t matter I would find a way .

The best food a man can crank out on a regular man’s budget is on a kettle for grilling and a WSM for smoking , I’ll go to my grave saying that 😁 Also, the WSM will hold temp better and longer than any pellet grill I’ve touched WITHOUT adding anything . I would routinely smoke burrs 12 hours on one load of charcoal and chunks , wouldn’t ever open it and barely have to touch it they hold temperature exceptionally well if kept out of heavy winds of course .

You bought one of the shitty commercially produced available pellet smokers and now hate them all? LOL Try a real pellet smoker with real support such as a GMG or Recteq. If you want more smoke flavor add a smoke tube.

I have used a bunch of them and I’m sorry but there isn’t 10 cents difference . I have even used Cookshacks . Sorry that I didn’t spell out every single thing I have used lol. That being said Traeger’s I’ve used aren’t as good as Pit Boss and GMG isn’t any better either . I like rectec and cook shack but again let’s talk about investment WSM is cheap in comparison . Primarily offering it up as a suggestion to try or as an alternative and it’s purely my opinion don’t take it too personal .
 
while I'm sure you're right pellets don't give as much flavor as a real charcoal/wood fired smoker, I'd wager 90% of the guys (me included) with one don't have time to babysit a smoker all day. That's the appeal. On the plus side, I get WAY more flavor out of my Traeger than I would if I just threw the thing in an oven, so yeah, its kinda an outdoor oven, but it also isn't.

I've had an offset barrel and 2 kettles in the past, BEFORE I had a kid, and I still never used them because they took way too long to get ready for my lifestyle. It may work for you. Pellet and a propane griddle work for me:emb:


I've got some pork chops going on tonight.

I tried single short ribs a week or two ago, worked awesome for those. Instead of braising then submersing in the crock pot, I smoked for a couple hours and then threw them in the crock pot with the other stuff for a couple hours on low. Next batch I'm going to eat straight off the smoker, they looked great. Wife said we should try smoking oxtail, I said it's too small and expensive to risk runining:homer:
