My manufacturing problem no. 1

I would put 2 lids top to top and use a KO punch

Is GF's areola the same diameter as the hole in the lid?

get the chink punch set
if it does leave flashing, then you can make a new punch that's a little bit tighter to the die, ain't tough
 
Looks like you are using the separate lids and rings. Get a bunch of lids, send them out to be laser cut or punched if you don’t want to invest in a punch. Could try a step bit, good for the thin stuff, if you can get one big enough. Stack multiples in a fixture and drill multiples at once.
 
Unipunch. Pick one up off ebay for $100. Maybe you get lucky and find the right size, but the punch/dies aren't much $.

Small mouth jars are cheaper.. like >$1.50 and the come with a lid.. oh, and she’s picky about the jars.. they gotta be smooth.. so that’s good because the cheaper jars are smooth.

Those premade lids with a big hole are only $2 each. If you are buying ring and lid set for $1.5, plus your time and tooling, you might consider just simplifying things and buy the lids ready to go. I dont know your production volume, but guessing it is pretty low to support her stuff.

Now if you have just cemented into the idea that you are gonna solve this problem no matter what..... I get it. Have to admit I have been there before too.

I’ve done a hundred or two over the past year.. cut 30+ last night. So , yeah, low production.. she’s not willing to spend the $ for premade lids.. even though she’s spending more on supplies to decorate. Honestly there’s room for the expense, but every dollar you don’t spend is a dollar profit.

So what I am hearing is that she thinks it is cost efficient because your labor is free. Sadly, I understand. I own my own business and had to explain to my wife that just because I own the business doesn't mean it is more efficient for me to do the work than an employee.
 
I’ve got a sheetmetal hole punch at work, variety of sizes, if you wanna give me a stack I can punch them all in a Friday and get them back to you.

I would use a trepanning tool, You can sharpen the tool for any type of material and width of cut.

This is just an example there are other trepanning tools out there some cheap, some expensive.​

Cut holes in material up to 1-3/4" thick. Cut smooth, clean overlapping holes. Cut holes across the edge of material. Machine custom diameter discs in materials up to 3/8" thick.

Hole type cutters are designed to make a clean hole with minimum burr.




Disc type cutters create discs with clean edges and minimum burring.

Been using them for 40+ years, they work fine for the application they are intended for.
Most don't take the time to learn to use them correctly and don't sharpen the tool correctly for the material being cut.

And I use a belt sander to sharpen my drills and most hss/cobalt tool bits

That looks like a PITA for small round pieces of flimsy sheetmetal.
