One of my good buddies was deployed with the National Guard to the border checkpoint in Falfurrias many years ago. Spent a year checking trucks coming from Mexico. To this day he won't eat produce except for what he buys himself from the local farmers market.
Any restaurant he goes to, no lettuce, no tomato, no onion.

How the risk assessment went:
"Well, if we bring it back without the astronauts and it all goes to shit we can say we did the right thing because the astronauts are still safe.
If it comes back fine we can say that we knew it would be fine but didn't want to take any risks. So...either way we made the right call.
