Spinoff of a thread in GCC.

Who's got a good recipe for Cajun spices for smoking a turkey? What wood do you guys prefer for poultry? I like pecan for pork and brisket. How's pecan do for poultry?
 
I have used a bunch of different woods in smoking and I have my favorites, but I love how one bbq cooking show said it; you use the wood that’s most available to you. I like to use pecan and oak, but I’m more heavy on oak, due to availability. Pecan is good though.

On a big turkey, I would use one of the Tony Chachere’s injections before hand, then my favorite rubs under the skin as much as possible. Then rub on the outside of the skin with seasoning and smoke away, basting it with butter as need be.
