Tamale Pie
2 (15oz) canned tamales - place in medium size casserole dish with sauce, remove paper wrappers, break-up tamales into “chunks”
(Hormel is the only brand I know of near me)
1 small can corn - drain juice, add to dish
1 Lb ground beef - brown ground beef, drain grease, add taco or enchilada seasoning (tbsp?), mix well
Onion - (optional) chop 1/4 cup, sauté until translucent, add to mixture
Garlic - (optional) mince 1-2 cloves, add to mixture
Grated cheese (Mexican blend) - add 1/2 to 3/4 cup to mixture
Gently fold all ingredients until well blended, add taco/enchilada seasoning to taste, top with grated cheese
Place in a preheated 350deg oven for 30 minutes
Some enjoy crumbled tortilla chips sprinkled over the top when served
