4 medium Russet potatoes

4 hard boiled eggs
  • bake potatoes & boil eggs the day before and refrigerate, makes it easier to peel and chop
1 medium onion, chopped

2-3 celery sticks, finely chopped

Peel potatoes then cut into cubes, lightly chop hard boiled eggs



In a bowl combine-

2 cups mayonnaise

1 dash regular mustard (quick squirt)

* lightly whisk mayonnaise & mustard

1 dash basil leaf (1/4 tsp)

Salt & pepper to taste



Combine all ingredients in a bowl and stir, refrigerate
