How about some Bawlmer style pit beef in the mountains of PA for the party this weekend?

Big round cut, trimmed well.
Rub is salt, pepper, garlic salt and old bay.
Sauce is gallon jugs of generic with Dr. Pepper or beer and old bay added.
Sauce them up after it gets a liitle char with the hard wood charcoal.
Slice it thin cross grain.
Grab your Kaiser roll and trim to your liking. Horseradish, onion and sauce.

It's the Baltimore standard. Everybody just tweeks it.
 
You're on the right track. The trick to this is to have a few hunks of meat on the grill like this and kinda rotate them on and off as you slice and serve. The center won't be cooked all the way when you start serving off the outsides. I always slice the corner off my cuts across the grain so I know how to slice it without even hesitating. Also, use gloves to move it around on the grill and serve. Nobody likes a bunch of fork stabs in their meat.

oh and slice the white onions the same thickness on a meat slicer or mandolin.

for you CA people, char a tri tip with SPG on it then slice paper thin on a meat slicer. Same type deal

There was an episode of Diners Drive Ins and Dives that he was in Maryland somewhere that was doing pit beef.. My mouth was watering the entire episode.. :laughing:
