that sounds good too. I put cheese in the above when I made. Will consider the eggs too! How did you add them in?
I usually heat up the jalapenos in a pan and I throw in some fresh vegis, usually red and green peppers and onions plus what ever else I happen to have, then I dump the eggs on top and cook them super runny but firm enough that I can dump them onto the sausage without them running out while I roll it up. I toss the cheese in uncooked on top of the eggs.
I'm actually putting together ingredients to make 4 of these this weekend for a camping trip I'm going on with some friends, we all take turns cooking a meal for the whole crew.
When I make a few I'll usually do different level of heat, one without any jalapenos and mild sausage and then one or two with jalapenos and hot sausage and then one with jalapenos, habaneros, serranos, hot sausage and usually some secret aardvark habanero hot sauce in the eggs.
