Camp meals

I precook some stuff like bacon, breakfast sausage and pulled pork. I seal a meal stuff into daily portions. This if for the annual 2 week family camping trip. And variety of food is important.
If it’s just a weekend then things are much simpler. Even simpler if it’s just me with my buddies.

Cooked pasta and sauce in a zip lock bag.

Cut up a Costco rotisserie chicken and use it for several meals. Use some to make chicken salad.

Hot dogs.

Pre microwave potatos so they are almost cooked. Cut open and stuff a slab of butter, chives, cheese, etc., inside. Very lightly coat with olive oil, then double wrap with foil. They will keep for several days in a cooler. When ready chuck in the coals for 10-15 minutes.

A buddy has a small tray he fabbed that's attached to an exhaust manifold. Works great for burritos potato, etc.

Bring a small grille for the campfire fire to do some grilling. I cut down a small stainless grille that works great.

I never head to the hills without bringing quality ribeyes for at least one night. You could be grilling that thing over pine in a snow storm and it'll still be the best damn steak you've ever had. The secret ingredient is mountains.

As others have said, there are a ton of great meals that you can pre-prep and cook in a skillet or Dutch oven with little trouble. I don't have any specific examples off the top of my head, but the internet does.

Also, I picked up a nice little propane flat top griddle on sale at Sam's club a few years ago (think 24"w X 14"d Blackstone knock off) and it was a game changer. Put it on a lightweight folding table and you've got yourself a kitchen. Steaks, burgers, bacon, eggs, pancakes, quesadillas, you name it. And it's OK to use during all but the most strict fire bans here in CO.
 
I still carry and use a green Coleman two burner stove. Made a fold down table mounted on the inside of my spare tire carrier mount for it. The gas can side has a fold down table as well, but that's for my cutting board. Makes a nice little kitchen area under the open hatch.

We used these for a ton of stuff, ham and cheese, potatoes, bread with apple pie filling dusted with little cinnamon inside, pizzas basically. My dad would do broccoli and cheese. So nice to have a hot crispy sandwich over the fire.
 
Sous-vide steaks ahead of time (pre-season them in the vacuum bag how you like). At camp, drop the bag into boiling water to get it back to temp and then eat as is or sear to get some crust.

Boil shrimp, season how you like (old bay for me), and vacuum bag into portions. Reheat as needed to church up ramen noodle, or use cold for shrimp ****tail or to add to bloody marys.

I just bought one of these and used it this past weekend on a three day canoe/primitive camping trip and it is legit (we did the rib-eyes per above). I love how self-contained and low profile it is but does have a little more footprint if you have to switch over to propane. It comes in a nice plastic case and is super easy to pack. The butane cartridges are available at Walmart. My coleman two-burner is history now.

It also depends on the type of camping and how mission critical weight is. Obviously canoe camping I can carry more than thru-hiking, and even more if working out of a truck so that is a consideration on meal prep.

I'm russian. We make shashlik. Marinate chicken, lamb, or beef cubes and cook em on skewers over open coals.

You can usually buy the stuff premade in bags at a middle eastern or eastern european market, also easy to make.
 
What do you all do for camp meals? Beyond burgers and dogs.

Stuff I can stuff in foil packets and toss on the campfire grill would be great.
I don't eat beyond burgers normally, let alone on a camping trip! :flipoff2:

Shrimp, diced potatoes, corn on the cob, sliced horseshoe sausage, butter, and cajun seasoning in a foil pack is pretty good.
 
My wife and I spend a lot of weekends running back roads, and usually set up camp late. She makes a lot of "hobo" style dinners that are super easy to cook on the old propane BBQ grille. She will pre-cut and separate into ziplock bags, then drop into the fridge. When camp is set up, she use's the aluminum Weber grille drip pans off Amazon, splits the bag into 2, covers with foil and cooks on the grille. Usually 10-20 min total. The drip pans are about a single serving each.

Couple of the dinners:
hobo packets
chicken/bacon ranch
street tacos
fajitas
beef stroganoff (use the Barilla ready noodles)
breakfast scramble

We usually take plastic utensils, so when done eating, fold the pans up and put it all in the ziplock bag for disposal.
 
Foil meals;
Beef, potatoes, carrots, onions and green peppers. Spice accordingly.

Anything in a tortilla;
Chicken, rice and veggies. Ad cheese and spices.

Chili, stew, soups, cobblers...

Breakfast;
Eggs, bacon, sausage, veggies, spices in a tortilla.

It's not that hard.
