1 lb. bacon------------------We only use half, and it's bacony, but feel free to report back with results if you use a whole pound.
1.5 lbs chopped cherry tomatos
1 chopped yellow onion
2 teaspoons smoked paprika
1/2 teaspoon red pepper flakes
1/4 cup brown sugar
2 Tablespoons white sugar
1 teaspoon salt
1 teaspoon ground mustard
1 Tablespoon apple cider vinegar
Dash cayenne pepper
To make the jam cook the bacon until crispy in a deep, then remove from the pan and crumble.
Drain most of, but not all, the grease, then add a large chopped yellow onion. Saute until the onions begin to soften, 7-9 minutes.
Stir in the tomatoes, bacon, apple cider vinegar, sugars, and spices. Bring the mixture to a boil.
Reduce the heat to a simmer and continue to cook until the jam is thickened, about 45-50 minutes, stirring occasionally. The jam is ready to be served!
It's the red stuff in the middle of the meat/cheese tray. My favorite way to eat it is on multigrain wheat thins crackers. I pretty much can't stop eating it until it's gone, just like cheese ball and shrimp ball. I'll post those recipe's as well if anyone's interested.
