. I only say that because my mom "voluntold" me to help neighbors all the time growing up..
Now on to the show.
3 Cup tomatoes peeled, drained, chopped
2 1/2 Cup yellow onion chopped
1 1/2 Cup green bell pepper
1 Cup jalapeño pepper chopped
6 garlic cloves minced
2 tsp cumin
2 tsp black pepper
1/8 Cup canning(kosher) salt
1/3 Cup sugar( we usually sugar to taste at end)
1/3 Cup vinegar
15 oz can tomato sauce
12 oz can tomato paste
1 cup cilantro
Bring to soft boil for 10 minutes and then jar.
The tomatoes we peel using a hot water bath and then a ice water bath. We then cut in half and use a spoon to try and remove as much seeds as we can( your essentially gutting them) and cut them up kind of big chunks.
With the jalapeño you need to also decide how much of the seeds you want to leave in. More seeds the hotter it ends up. Also depends on the jalapeño hot level. Our homegrown ones always seem way hotter than any store bought ones.
The recipes works well also if you double or triple it.
