Salting rice

Hot Italian sausage, split open, casing side up on a pan hot enough to sizzle water right off when flicked.

After a few minutes..5? I dunno, long enough to see color change, add a bunch of yesterday's cold rice after flipping over sausage.

Once rice is warm and seems to be colored from sausage juice, add to plate and eat

We always have a bag of this in the pantry :homer:


Place medium pot on stove
Put 1 cup rice, 2 cups water (+/-) in pot
Bring to a boil, then stir
Reduce heat to simmer, put lid on pot
Leave it alone for 16-18 minutes
Remove from stove, stir, enjoy
 
Yall need to add some MSG.

1) Get rice and put in pot
2) Cover with water. Put your finger on the rice (don't insert into the rice) and the water should be up to your first knuckle above your fingernail
3) Toss a chicken cube in there
4) Sprinkle a package of Goya Sazon seasoning in there
5) Bring to simmer, cover, reduce heat to low
6) Simmer 15 - 20 minutes.
7) Profit
 
Rice is such as blank canvas. It soaks up flavor well and has a lot of diversity as to types and cooking methods.

I like to add it to roast in the oven in place of vegetables sometimes. Do this partially through the cooking process.

The wife makes fried rice. Cook rice, let it fully cool, then fry it in a combination of sesame oil and canola, egg, soy sauce, etc.

You can cook it in a milk, sugar, salt mixture to make rice pudding.

I like to make Mexican style lime cilantro rice. Kind of like fried rice with a Mexican twist.
 
Sushi rice

1 cup high quality short grain rice
1 1/4 cups water

3 tbsp rice vinegar
1/2 tsp salt
3/4 tbsp sugar

Rinse rice and cook it

Warm rice vinegar to dissolve salt and sugar. Fold into rice when warm when done being cooked.

This is the rice we use

Fold the warm rice vinegar into the warm rice. Put in fridge to cook for sushi .

Make extra when you make white rice so you can refrigerate the extra (leave unseasoned). Make fried rice with it in a couple days, comes out way better if the rice has been refrigerated after being cooked.

Bit of oil in a pan, butter once it's hot, throw in a couple eggs, rice, and some veggies. Soy sauce once it's mostly cooked. Comes out like good hibachi rice.

The secret to good fried rice is using old cold refrigerated rice, not hot or even warm.

My brothers brother in law lives in his late grandfathers' house. Old school Chinese. There is no oven. There's a built in Wok in the island and everything is cooked in that. Incredible.
