Potato Leek soup with Santa

Ok, what you need.

1/2 to 3/4 pound of bacon diced
3 to 4 leeks, we use just the whites
3 to 4 cloves of garlic chopped
3 to 4 large russet potatoes
about a pound of shredded zucchini
3 cans chicken stock, or home made if you have it
salt
pepper
Crushed red pepper flakes
shredded cheese for topping
snoop dog wine for sizzle my nizzle

I've got 2 servings of gutterrunners soup left. Looks good I'll try that next.
 
Once brown and crispy, remove from pan, set aside and drain off all but about 2 or 3 ounces of the bacon grease.

Toss in the cleaned and chopped leeks. These came from our garden.

Add salt, pepper, chili flakes. Stir occasionally until soft.

then add chopped garlic and stir until garlic is cooked.

This is what we figured out what do do with all the leftover zucchini we have from the garden every summer. My wife shreds and freezes it in ziplock bags. Grab a bag out of the freezer and toss it in. This is totally nm optional and not at all necessary. It adds a bit of creaminess to it without dairy.

Let the zucchini thaw, and add the potatoes, broth and cover. Bring to a boil and cook for about 15 minutes until taters are soft.

I did not take pictures of the final product, cause I was eating. But ladell into a bowl, sprinkle some bacon and shredded cheese and enjoy.

If I make it on a weekend, I dump the extra bacon grease into a 10" frying pan, then fry up a potato diced into 1/4" chunks and use as another topping for the soup.

It's really amazing I'm not 300 pounds.:lmao:

Not a big soup guy here. Also never cared much for leek in anything.

Watched some Gordon Ramsey on YouTube and made this sauteed leek/bacon/hashbrowns dish. Added two scrambled eggs for extra protein. First time I ate leek in likely 25 years or more :), made enough for two meals (leftovers).
