Olive Garden Pasta Faggioli soup knockoff.

I love this soup and once everything is in the pot, all you need to do is wait and stir occasionally.

What you’ll need:

1 LB ground beef
1small onion diced ( 1 cup)
1 large carrot julienned (1 cup)
3 stalks celery chopped ( 1 cup)
2 cloves garlic minced
2 15 oz cans diced tomatoes
1 15 oz can kidney beans ( with liquid)
1 15 oz can great northern beans ( with liquid)
1 15 oz can tomato sauce
1 12 oz can V-8 juice
1 tablespoon white vinegar
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon black pepper
1/2 teaspoon thyme
1/2 pound ( 1/2 package) ditalini pasta


What to do:

1: Brown ground beef in large saucepan over medium heat.
Drain fat.

2: Add onion, carrot, celery, garlic, and sauté for 10 mins.

3: Add remaining ingredients (except pasta) and simmer for 1 hour.

4: After an hour, into the simmering, cook pasta until al dente or slightly tough.

5: Add pasta to the pot of soup. Simmer for about 10 mins and serve.

That’s the recipe if you’re serving it right away.
I make mine to freeze into individual portions so I don’t add the pasta.
I simply follow the recipe and freeze that as is.

When I want a serving, I cook the pasta separately ( about 1/3 cup per 30 oz serving) and add it to the microwaved soup afterward. Freezing the pasta in the soup makes it mushy from my experience.

Nothing is set in stone and you can’t screw it up.

Not to be picky but old school Pasta Fazool ingredients are;

Large pepperoni stick

Large can of Cannellini beans
