Cooking in Aluminum pan

Gonna try a smoked version of a Mississippi pot roast for Tacos. Gonna smoke it on a pellet smoker for a couple hours then into a pan to roast it until done.

Supposed to be cooking for 20ish people.

I was thinking two of those deep aluminum pans side by side to slow cook at like 275 until done.

Any issue using those things?
 
Never tried them at 275 but I do all my briskets and pork butts in them up to 250.

Good info.

Doing pulled beef with a chuck roast. As much as I can fit into the grill. Just haven’t cooked in one of those pan for a long time. Glad to see you have had success in it.
 
Since you're smoking it I'd want a big flat shallow pan so it can really marinate in the juices.

I'd be worried the top will come out dry if cooking it in a narrow and deep pan.

I agree 275 sounds high.

Fat renders at 206. I just cook shit to 212 because fuck remembering two numbers.
 
Yea. I don’t think I cooked it long enough to pull it. Ended up just ok.

I was disappointed and had to make it up so I made a couple pork butts.

I use SS steam pans on my smoker. I have several long shallow pans for braising ribs and stuff. The pans come in all kinds of dimensions.
Amazon and Walmart have good selections. You can also find them at a restaurant supply house. :smokin: Brand in Winco
