Forget pellets, real wood is where its at.
Backstory:
I used to have an Oklahoma Joe Longhorn until my ex-wife sold it out from under me for pill money when we were divorcing. It was a good smoker with a moderately large cooking surface, but had its downfalls, like cheap paint and janky inlet vent and exhaust lid. I understand there will be compromises at my price point, but want to keep them as minimal as possible. I liked the smoker as a basic learning tool, but this time I know what I am looking for.
Needs:
Multiple cooking surfaces, prefer 5 or more.
Surface must be large enough for a brisket.
Must be able to remove grates inside for room to hang meat/fish for smoking when desired.
Ability to put a juice pan underneath to catch the drippings for gravy.
Decent high-temp finish.
Quality cover available.
Solid reputation for temperature control through inlet/exhaust manipulation.
Doesn't matter if it has wheels or not, but they are a bonus for cleaning underneath (and moving under the gazebo for winter).
I was looking at the Dyna-Glo units, but not sure if I am sold on their current quality. Some more recent reviews say they are thin-walled and have cheap paint. I am definitely not afraid to be liberal with the smoker gasket at the box to chamber connection or at the doors, so reviews complaining about leaks there are BS.
What do you recommend, and why?
