I got a little crazy with my new plasma cutter. Should I weld up all these undercuts or does all that welding just weaken the area? This is the worst spot. I am plating the whole area.

chop at red line, new tube up higher where green line is, like slander said. you will thank us because now you gain all the up travel for the axle.
How much do you actually gain considering the oil pan hangs down pretty low, even with a 2wd oil pan you can only go so far?

You will gain little to no strength, and adding heat in one spot is going to pull and warp. I'd plate over it and call it done.
