1ST ATTEMPT AT FRYING POTATO WEDGES

Beef Tallow is the only way, pork fat is pretty good too, but I like the flavor better with beef.

Duck fat is supposed to be awesome. Have never tried it.



Major burger bar by me had them years ago, only on Sundays. Been years now, those shits were awesome!
 
I bake them after tossing in oil mixed with ranch dressing powder.

Like a retard I set them all skin down, about an hour @ 350-375*
