Persimmon bread

Requires:
1/2 tsp ground nutmeg
1 1/2 tsp ground cinnamon
2 cups sugar
1 cup vegetable oil
1 1/2 tsp salt
4 eggs
1 cup persimmon pulp
2/3 cup water
3 cups flour
2 tsp baking soda




Combine baking soda and persimmon pulp, mix, let stand 5 minutes to thicken.
Beat eggs, sugar, oil, salt, and spices together.
Mix in persimmon pulp, water, and flour alternately.
Divide batter into greased loaf pans, filling each about 2/3 full.
Bake at 350 deg for 1 hour, or until toothpick comes out clean.
 
I think my Okie grandmother made persimmon jelly once in a while. I just remember seeing a bunch of persimmons on the kitchen counter, then on my next visit there would be several little jar of pinkish jelly in the cupboard.

It may have been some kind of berry jelly now that I think about it ¯\(ツ)
